Lasyone's Red Beans And Sausage

1 (16-ounce) package dried red kidney beans
10 cups water
1/2 cup vegetable oil
1 medium onion, chopped
1 medium-size green pepper, chopped
2 stalks celery, chopped
2 teaspoons salt
2 teaspoons sugar
1 teaspoon garlic powder
3/4 teaspoon red pepper
1/2 teaspoon dried parsley flakes
1 cup ground smoked sausage
Hot cooked rice


Sort and wash beans. Combine beans and next 10 ingredients in a Dutch oven; bring to a boil. Reduce heat; cook, uncovered, over medium heat 1 1/2 hours or until beans are tender.

Stir in sausage; cook 30 minutes. Serve over hot cooked rice.
