Liven up a simple grilled cheese with Sambal Oelek, a spicy chili paste that delivers Asian-inspired heat. Trade out your heavy cheeses for a reduced fat sharp cheddar and low fat cream cheese. Topped with wilted kale, this is a sandwich that is packed with greens and protein, yet still tastes like an indulgent, grown-up take on a kids' classic.

Serves 4 (serving size: 1 sandwich)

Ingredients

1 tablespoon canola oil
8 (1-ounce) whole-grain bread slices
1 1/2 tablespoons sambal oelek
4 teaspoons canola mayonnaise
4 ounces shredded reduced-fat sharp cheddar cheese
2 ounces 1/3-less-fat cream cheese
1 garlic clove, grated
1 1/2 cups chopped wilted kale

Preparation

Brush canola oil evenly over 1 side of bread slices. Combine sambal oelek, mayonnaise, cheddar cheese, cream cheese, and garlic; spread over non-oiled sides of 4 bread slices. Top with kale and remaining bread, oiled side up. Cook in a large skillet over medium 3 minutes per side or until toasted and cheese melts.
