1 2/3 cups cornmeal
3/4 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup chopped onion
3/4 cup milk
1/4 cup vegetable oil
2 eggs, lightly beaten
Reserved vegetable oil


Combine cornmeal, flour, baking powder, salt, pepper, and onion in a medium mixing bowl; add milk, 1/4 cup vegetable oil, and eggs, stirring well.

Carefully drop batter by tablespoonfuls into deep hot oil (375°), cooking only a few at a time. Fry 3 minutes or until hush puppies are golden brown. Drain well on paper towels. Serve immediately.
