Hot Tomato Salad

Hot Tomato Salad Recipe
Makes 5 cups

4 yellow banana peppers
2 green banana peppers
2 jalapeño peppers
4 to 5 large tomatoes
2 garlic cloves, minced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh oregano
2 ounces smoked Cheddar cheese, cubed (optional)
1/2 cup olive oil
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons sugar (optional)
Garnish: fresh basil sprig


Prep: 15 Minutes
Chill: 4 Hours

Remove and discard seeds from peppers and tomatoes. Dice peppers and tomatoes; place in a large bowl. Toss in garlic, herbs, and, if desired, cheese.

Stir together oil, next 3 ingredients, and, if desired, sugar; add to tomato mixture, tossing to coat. Cover and chill 2 to 4 hours. Serve with a slotted spoon. Garnish, if desired.
