1/2 cup plain fat-free Greek yogurt
2 tablespoons honey
1 tablespoon extra-virgin olive oil
1 teaspoon grated lemon rind
2 ounces goat cheese, softened


Combine yogurt, honey, olive oil, lemon rind, and cheese. Beat with a mixer at medium speed until light and fluffy, about 1 minute. Serve over pancakes, waffles, oatmeal, or toast.
