Herbed Baby Red Potatoes

2 pounds baby red potatoes, scrubbed
Olive oil, to taste
Salt, to taste
Black pepper, to taste
Parsley, freshly chopped, to taste


Bring a pot of lightly salted water to a boil. Cook the potatoes until tender, 10 to 15 minutes. Toss with the olive oil, salt, pepper, and parsley. Reserve 6 potatoes for Spring Lentil Soup.
