Ham Casserole

1 (14 1/2-ounce) can whole tomatoes, undrained
1 cup regular rice, uncooked
1 cup minced onion
1 cup (4 ounces) shredded Cheddar cheese
1 cup diced celery
1 cup boiling water
3/4 pound ground, cooked ham
1/3 cup olive oil
1 1/4 teaspoons salt
1/4 teaspoon pepper


Combine all ingredients in a large mixing bowl, stirring until well blended. Spoon mixture into a lightly greased 2-quart casserole. Cover and bake at 325° for 2 hours or until rice is tender.
