Grilled Herbed Grouper

Makes 3 to 4 servings

1 (1 1/2-pound) grouper fillet
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup fine, dry breadcrumbs
1/3 cup minced fresh parsley or 3 tablespoons dried parsley flakes
1 tablespoon minced fresh or 1 teaspoon dried basil
1 tablespoon minced fresh or 1 teaspoon dried thyme
Garnishes: fresh basil sprigs, fresh thyme sprigs, lemon slices


Brush fillet with oil; sprinkle with salt and pepper.

Stir together breadcrumbs and next 3 ingredients; press onto all sides of fillet. Place fillet in a lightly greased grill basket.

Grill, covered with grill lid, over medium heat (300° to 350°) 7 to 8 minutes on each side or until fish flakes with a fork. Garnish, if desired.
