Serves 4 (serving size: about 2/3 cup)
Bring chicken broth, water, orange rind, and salt to a boil in a medium saucepan. Stir in couscous. Remove pan from heat; cover and let stand 5 minutes. Drizzle olive oil and orange juice over couscous; fluff with a fork. Stir in green onions.
