Simple green beans are a crowd-pleasing side that’s easy on the pocketbook. The toasted walnuts provide an extra dose of heart-healthy omega-3s. 

Serves 4 (serving size: about 3 ounces green beans)

1 pound trimmed green beans
1 tablespoon walnut oil
3/8 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped toasted walnuts


Cook green beans in boiling water 30 seconds; plunge into a bowl of ice water. Drain. Drizzle with walnut oil, sea salt, and pepper. Top with walnuts.
