Green Bean Salad with Blue Cheese Dressing

Here's your salad and your side all in one dish. This blue cheese and green bean combo is delicious served with a juicy beef tenderloin.
4 servings (serving size: 1/2 cup)

1/4 cup low-fat sour cream
1 tablespoon light mayonnaise
2 tablespoons low-fat buttermilk
2 tablespoons crumbled blue cheese
1/2 teaspoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups trimmed and halved green beans (about 8 ounces)
1/3 cup finely chopped red onion
2 slices 40%-less-fat bacon (such as Gwaltney), cooked and crumbled


Prep: 13 Minutes
Cook: 14 Minutes

Combine first 7 ingredients in a small bowl; stir with a whisk.

Steam green beans, covered, 14 minutes or until crisp-tender. Rinse with cold water. Drain well, and pat dry with paper towels.

Combine beans and onion in a large bowl; add dressing, and stir gently. Sprinkle evenly with crumbled bacon.
