1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 cups thinly sliced fennel bulb (about 1 large)
2 cups thinly sliced Granny Smith apple (1 large)
1/4 cup fresh flat-leaf parsley leaves
1/4 cup slivered red onion

1. Combine first 5 ingredients in a medium bowl; stir until sugar dissolves. Add fennel and remaining ingredients; toss to coat.
