Greek Caesar Salad

3/4 cup olive oil
1/4 cup lemon juice
1/4 cup egg substitute
2 cloves garlic, pressed
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1 head romaine lettuce, torn
3/4 cup kalamata olives
1 small purple onion, thinly sliced
1/2 cup crumbled feta cheese


Combine olive oil and next 6 ingredients in a small bowl, stirring with a wire whisk. Cover olive oil mixture, and chill.

Combine lettuce and next 3 ingredients in a large bowl; gradually add enough olive oil mixture to coat leaves, tossing gently. Sprinkle with Pita Croutons, and serve with remaining olive oil mixture.
