Greek Caesar Salad

3/4 cup olive oil
1/4 cup lemon juice
1/4 cup egg substitute
2 garlic cloves, pressed
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1 head romaine lettuce, torn
3/4 cup kalamata olives
1 small red onion, thinly sliced
1/2 cup crumbled feta cheese


Prep: 10 Minutes

1. Whisk together olive oil and next 6 ingredients in a small bowl. Cover and chill up to 2 days.

2. Combine lettuce and next 3 ingredients in a large bowl; gradually add enough olive oil mixture to coat leaves, tossing gently. Sprinkle with croutons, and serve with remaining olive oil mixture.
