Gül's Lentil Patties

1 cup red lentils
4 cups water
2 tablespoons tomato paste
1 cup uncooked bulgur wheat
1 small onion, finely minced
2 tablespoons olive oil
1/8 teaspoon ground red pepper
1/4 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley
1/4 cup fresh lemon juice
Romaine lettuce leaves
Lime wedges


Cook lentils, uncovered, in water over medium-high heat 12 to 15 minutes or until tender (do not drain). Stir in tomato paste and bulgur; cover and let stand 20 minutes. Combine lentil mixture, onion, and next 8 ingredients.

Form football-shaped patties, using a heaping tablespoon of mixture for each patty. Serve on romaine lettuce leaves with lime wedges.
