work time: 3 minutes cook time: 5 hours or 8 hours


  • 4 sweet potatoes, scrubbed
  • 1 turkey tenderloin (about 3/4 pound)
  • 1 (14 1/4-ounce) can fat-free, reduced-sodium chicken broth
  • 2 bay leaves
  • 1/2 cup apricot spreadable fruit


  1. Place potatoes in bottom of a 5-quart electric slow cooker; place turkey over potatoes.
  2. Pour broth over turkey; add bay leaves and spreadable fruit. Cover and cook on high setting 5 hours or until turkey is tender. Or, cover and cook on high setting 1 hour; reduce to low setting, and cook 7 hours. Remove and discard bay leaves. Slice and serve tenderloin with potatoes.
