Ginger-Curry Vinaigrette

Drizzle dressing over spinach salad with walnuts and sliced apples or lentil salad.
Makes 2 cups

1/2 cup white wine vinegar
2 1/2 tablespoons curry powder
2 tablespoons minced fresh ginger
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot sauce
1 1/2 cups olive oil


Process first 6 ingredients in a blender until smooth, stopping once to scrape down sides. Turn blender on high; add oil in a slow, steady stream. Cover and chill.
