Garlicky Bean And Spinach Salad

1 (15-ounce) can navy beans, rinsed and drained
1/2 cup sliced red onion
1 tablespoon cider vinegar
1 tablespoon extra-virgin olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Preparation

Prep: 12 Minutes

Combine first 3 ingredients in a large bowl. Combine vinegar and remaining 4 ingredients in a small bowl; add to bean mixture, tossing gently to coat. Serve immediately.
