Garden Slaw with Tarragon

This is a great side dish for roast chicken or grilled salmon.
6 servings (serving size: 3/4 cup)

1/4 cup low-fat buttermilk
3 tablespoons light mayonnaise
1 tablespoon fresh lemon juice
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
3 cups sliced Savoy cabbage
1 cup (1-inch) diagonally cut wax beans, steamed
1/2 cup snow peas, trimmed and cut lengthwise into thin strips
1/2 cup red bell pepper strips
1/3 cup shredded carrot
1/4 cup vertically sliced red onion
1 tablespoon chopped fresh tarragon


To prepare dressing, combine first 6 ingredients, stirring with a whisk.

To prepare salad, combine cabbage and remaining ingredients in a large bowl. Add dressing mixture, tossing to combine. Chill 30 minutes.
