Fruited Streusel Muffins

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
2 teaspoons grated lemon rind
1 egg, lightly beaten
3/4 cup plus 1 tablespoon nonfat buttermilk
3 tablespoons vegetable oil
Vegetable cooking spray


Combine first 6 ingredients in a medium bowl; make a well incenter of mixture. Combine egg, buttermilk, and oil; add to dry ingredients, stirring just until dry ingredients are moistened.

Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Sprinkle evenly with Fruited Streusel Topping. Bake at 400° for 15 minutes or until golden. Remove from pans immediately.
