Fried Okra

3 pounds okra
5 slices bacon
1/2 teaspoon salt
1/4 teaspoon pepper


Wash okra well; drain. Cut off tip and stem ends; cut okra into 1/4-inch slices, and set aside.

Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Crumble bacon, and set aside.

Sprinkle salt and pepper over okra; toss gently. Cook okra in reserved bacon drippings over medium heat 30 minutes, stirring frequently. Cover, and cook an additional 15 minutes or until okra is tender, stirring occasionally.

Note: This is a traditional method of frying okra without batter.
