Fresh Spring Couscous

1 (10-oz.) package plain couscous
1 1/2 cups frozen sweet green peas, thawed
3/4 cup crumbled feta cheese
1/3 cup sliced green onions
1/4 cup chopped fresh mint
2 teaspoons lemon zest
3/4 teaspoon freshly ground pepper
Salt to taste


Prep: 10 Minutes
Other Time: 5 Minutes

Prepare couscous according to package directions. Stir in peas, feta cheese, green onions, mint, lemon zest, pepper, and salt to taste.
