Fresh Peach-Orange Salad

4 servings (serving size: 1 lettuce leaf and 3/4 cup peach mixture)

2 medium oranges
2 cups diced, peeled fresh peaches (about 2 large)
1/3 cup dried cherries
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/2 teaspoon grated fresh ginger
4 Bibb lettuce leaves


Prep: 12 Minutes

Grate 1 teaspoon rind from orange; set aside. Peel oranges, and cut out sections over a medium bowl; squeeze membranes to extract juice. Reserve juice. Discard membranes.

Combine orange sections, reserved juice and rind, peaches, and next 4 ingredients. Serve on lettuce leaves.
