Fresh Lemon Sauce

Makes 3 cups

1 cup sugar
2 tablespoons cornstarch
1/4 cup (1/8 lb.) butter or margarine
2 tablespoons grated lemon peel
1/4 cup lemon juice


In a 1- to 2-quart pan, mix sugar and cornstarch. Stir in 2 cups water. Bring to a boil over high heat, stirring, about 4 minutes. Remove from heat. Add butter or margarine, grated lemon peel, and lemon juice. Stir until butter melts. Serve warm.
