2 teaspoons unsalted butter
2 cups fresh corn kernels
2 tablespoons minced shallots
3/4 cup 1% low-fat milk
2 teaspoons all-purpose flour
1/4 teaspoon salt


1. Melt butter in a large nonstick skillet over medium-high heat. Add corn and minced shallots to pan; cook 1 minute, stirring constantly. Add milk, flour, and salt to pan; bring to a boil. Reduce heat to low; cover and cook 4 minutes.
