For a fresh summer side dish, try this sauté of corn, green onion, and red bell pepper.
Serves 4 (serving size: about 1/2 cup)
1. Melt butter in a large nonstick skillet over medium-high heat. Add corn to pan; sauté 2 minutes. Add green onions, bell pepper, salt, and pepper to pan; sauté 2 minutes or until crisp-tender.
