This summery sauté of corn and bacon makes a simply delicious side dish. 

Serves 4 (serving size: 1/2 cup)

2 center-cut bacon slices
2 cups fresh corn kernels
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon chopped fresh chives


1. Chop bacon. Add bacon to a large nonstick skillet over medium-high heat; cook until bacon begins to brown. Add corn, salt, and pepper to pan; sauté 4 minutes or until crisp-tender. Sprinkle with chopped fresh chives.
