1/2 clove garlic, cut in half
1/3 cup white wine
1 tablespoon freshly squeezed lemon juice
2 cups combination of grated gruyere and swiss cheese (about 8 oz)
2 teaspoons cornstarch
Salt and pepper
1 large apple, 2 carrots, and 4 oz French bread, cut in bite-size pieces

Preparation

Prep time: 10 minutes
Cooking time: About 5 minutes

1. Rub inside of a small saucepan with garlic; leave clove in pan. Add wine and lemon juice and place over medium heat.

2. Toss cheese with cornstarch in a small bowl. Just as the wine mixture reaches a boil, slowly add cheese to pot, stirring constantly until cheese is melted and smooth.
Continue stirring another minute, or until thickened slightly. Season with salt and pepper.
Serve immediately with apple, carrots, and bread.

Kid-friendly version: Double the recipe and use apple juice instead of wine. Do the dipping for kids under 3; supervise older ones.

How kids can help: Grate cheese; toss cheese with cornstarch.

Open a bottle of dry white wine: Use some for the recipe and save the rest for dinner
