Fluffy White Frosting

frosting for one (9-inch) 3- layer cake

1 cup plus 2 tablespoons sugar
3 egg whites
1/2 cup light corn syrup
3 tablespoons water
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1 1/2 teaspoons vanilla


Combine sugar, egg whites (at room temperature), syrup, water, cream of tartar, and salt in top of a large double boiler; beat at low speed of electric mixer 30 seconds or just until blended.

Place over rapidly boiling water; beat constantly at high speed of electric mixer 7 minutes or until stiff peaks form. Remove from heat, and add vanilla; beat 1 minute or until frosting is thick enough to spread. Spread on cooled cake.
