Fish Pie

2 stalks celery, chopped
2 carrots, chopped
2 garlic cloves, chopped
3 tablespoons olive oil
1 cup milk
1 10-ounce box frozen chopped spinach, thawed and squeezed
1/2 cup peas
1/2 cup grated Parmesan
3 eggs
1/2 cup parsley, chopped
2 tablespoons Dijon mustard
1 teaspoon salt
2 6-ounce halibut fillets, flaked, cooked or raw
2 pounds packaged refrigerated prepared mashed potatoes (such as DinerÅfs Choice)
2 scallions, sliced


Prep: 15 Minutes
Other: 40 Minutes

Saute celery, carrots, and garlic in 3 tablespoons olive oil for 5 minutes. Remove from heat. Stir in milk, spinach, peas, Parmesan, eggs, parsley, Dijon mustard, salt, and flaked halibut. Pour into a 2-quart baking dish. Mix mashed potatoes with

scallions and spread on top of the pie. Bake 40 minutes at 400° F.
