Fire!! was an influential literary journal that put out only one issue. According to Langston Hughes, the point was to "burn up a lot of the old, dead conventional Negro-white ideas of the past." In the spirit of Fire!!, we challenge the notion of what a soul food green bean recipe can be. This recipe--one we got from a young black chef at a hip, more than a little bougie, burger joint in Nashville--is a luminous example of the new old school.
Makes 4 servings
1. Preheat oven to 375°. Stir together first 5 ingredients. Arrange green beans in a single layer on an aluminum foil-lined baking sheet. Drizzle with olive oil; toss. Bake 10 minutes. Increase oven temperature to broil, and broil 4 to 6 minutes or until browned in spots and crisp-tender.2. Remove from oven. Drizzle beans with lemon juice mixture; toss. Season to taste with kosher salt and freshly ground black pepper. Serve hot, or cool completely, chill, and serve cold. These just get better as they sit.
