Feta Cheese with Thyme, Honey, and Pine Nuts

1/4 cup honey
1/2 teaspoon grated lemon rind
2 teaspoons lemon juice
3/4 teaspoon finely minced fresh thyme
2 tablespoons pine nuts, toasted

Preparation

1. Place 1 cheese slice on each of 4 small plates.

2. Combine honey, rind, juice, and thyme in a small bowl. Drizzle honey mixture evenly over cheese. Sprinkle with the pine nuts.
