Egg Burrito

Our kid testers had a blast helping with almost every step of this zesty Mexican recipe, and they devoured the results. Serve 1 burrito to kids and 2 to adults.

Ingredients

4 large eggs
1/4 cup water
1/4 teaspoon salt
Dash ground black pepper
Nonstick cooking spray
3/4 cup shredded monterey-jack cheese
8 tablespoons mild salsa

Preparation

Prep time: 10 minutes
Cooking time: About 10 minutes

1. Heat oven to 400 degrees.

2. Whisk eggs with water, salt, and pepper in a medium bowl; in a skillet coated with nonstick cooking spray, scramble eggs over medium heat until cooked through.

3. Divide the eggs among tortillas, then spoon 2 tablespoons of the cheese and 1 tablespoon of the salsa over each.

4. Roll tortillas and place seam side down in a baking dish. Bake for 5 minutes, or until heated through.

How kids can help: Whisk eggs; spoon cheese and salsa onto tortillas; roll tortillas.

TIP: Pepper-jack cheese revs up adult portions.
