Easy Meatball Minestrone

6 servings (1 1/2 cups each)

4 cans (14.5 oz each) beef broth
1 bag (16 oz each) frozen mixed vegetables
1 package (16 oz each) frozen cooked meatballs
1 can (15 oz each) small white beans, drained, rinsed
1 can (14.5 oz each) Hunt's Diced Tomatoes with Green Pepper, Celery & Onions, undrained
1/4 cup Hunt's Tomato Paste
1/4 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup small shell pasta
Shredded Parmesan cheese, optional


Hands On: 15 minutes
Total: 30 minutes

1. Combine broth, vegetables, meatballs, beans, tomatoes with their liquid, tomato paste, Italian seasoning, salt and pepper in large saucepan or Dutch oven.

2. Bring to a boil over high heat. Reduce heat to medium-high; add pasta. Cook for 15 minutes, stirring occasionally, or until pasta is tender. Garnish with cheese, if desired.
