Extra-tart vinegar adds tang to finely chopped Eastern North Carolina Slaw.

1/2 cup white vinegar
1/4 cup sugar
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 head green cabbage (about 1 lb.), grated
1/2 cup chopped celery

Total: 1 Hour, 15 Minutes
Whisk together vinegar, sugar, kosher salt, and freshly ground black pepper. Add cabbage and celery; toss to coat. Let stand 1 hour before serving, tossing occasionally. Serve with hot sauce.
