Dressed Cucumbers

4 large cucumbers, unpeeled and thinly sliced
2 small onions, separated into rings
2 medium-size green peppers, chopped
1/4 cup chopped fresh parsley
1 cup apple cider vinegar
1 cup water
1/4 cup sugar
1 tablespoon salt
1/2 teaspoon pepper
Lettuce leaves


Combine first 4 ingredients in a shallow dish; toss lightly.

Combine next 5 ingredients, mixing well. Pour over vegetables, tossing to coat well. Cover and chill at least 2 hours. Drain and serve in a lettuce-lined bowl.
