Date Muffins

1 cup finely chopped dates
1 cup boiling water
1 tablespoon shortening
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped pecans


Combine first 3 ingredients; let stand 1 hour. Stir in egg and vanilla.

Combine flour and next 4 ingredients in a bowl; make a well in center of mixture. Add date mixture, stirring just until moistened. Spoon into greased muffin pans, filling three-fourths full.

Bake at 350° for 25 to 30 minutes.
