Curried Cauliflower

2 teaspoons light stick butter
1 cup chopped onion
1 garlic clove
1 (1-inch) piece fresh ginger, minced
4 cups fresh cauliflower flowerets
1/2 cup water
1 1/2 teaspoons curry powder
1/2 teaspoon salt

Preparation

Melt butter in a large nonstick skillet over medium-high heat. Add onion, garlic, and ginger, and cook, stirring constantly, 5 minutes. Add cauliflower and remaining 3 ingredients. Bring to a boil; cover, reduce heat, and simmer 7 to 8 minutes or until tender, stirring occasionally.
