Cucumber Combo

3 large onions, sliced
2 medium-size green peppers, seeded and chopped
2 cloves garlic, minced
1/2 cup butter or margarine
6 medium cucumbers, cut into 1/2-inch-thick slices
4 tomatoes, peeled and coarsely chopped
2 bay leaves
1 teaspoon salt
1/2 teaspoon pepper


Sauté onion, green pepper, and garlic in butter in a large Dutch oven until vegetables are crisp-tender. Stir in cucumber slices and tomatoes; add bay leaves, salt, and pepper. Stir well; cover and simmer 35 minutes. Remove bay leaves; discard. Serve immediately.
