1 1/2 cups small curd cottage cheese
1/2 cup seeded and diced cucumber
1/4 cup fresh minced parsley
1 (16-ounce) loaf thinly sliced wheat bread
Combine first 3 ingredients, mixing well.
Remove crust from bread, and slice in half diagonally. Spread filling on each, and top with a cucumber slice.
