The blend of cucumber, basil, and lime make this spiked treat super refreshing. 

Makes 4 to 6 servings

4 cups seedless cucumber slices
3 tablespoons fresh lime juice
1/2 cup Simple Syrup
1 cup fresh basil leaves
Pinch of salt
Chilled herbal gin (such as Hendricks), optional


Hands-on: 10 Minutes
Total: 4 Hours, 45 Minutes

Process first 3 ingredients in a blender 20 seconds. Add basil and salt; process 20 seconds. Pour mixture into a 9- x 5-inch loaf pan. Freeze 4 to 5 hours or until ice crystals form, stirring every hour. If desired, top each serving with a shot of chilled gin.
