Cucumber Aspic

Oxmoor House
You're going to love the fresh and tangy flavor of this versatile throwback recipe. Sweet cucumbers and lemon and lime flavored gelatin temper the savory flavors of the horseradish, chopped celery, grated onion, and dill seeds. If you have trouble finding a ring mold at your local retailer, it can easily be ordered online. Once the dish is firm, unmold it and garnish with fresh parsley sprigs and cherry tomatoes. Serve with sour cream, if desired.
