Crumb-Coated Fried Chicken

1 cup finely crushed cracker crumbs
1 teaspoon salt
1 teaspoon pepper
1 egg, beaten
1 (3- to 3 1/2-pound) broiler-fryer, cut up
Vegetable oil


Combine first 3 ingredients; mix well. Dip chicken in egg; dredge in crumb mixture.

Heat 1 inch of oil in a large skillet to 325°; add chicken, and fry 30 minutes or until golden brown, turning once. Drain chicken on paper towels.
