Creole Sauce

2 large onions, finely chopped
2 cloves garlic, minced
1 green pepper, finely chopped
2 tablespoons chopped fresh parsley
2 bay leaves
Dash of dried whole thyme
1 tablespoon shortening, melted
1 tablespoon all-purpose flour
1 (16-ounce) can tomatoes, undrained and chopped


Sauté first 6 ingredients in shortening in a large skillet about 15 minutes over low heat. Add flour, and cook 1 minute, stirring constantly. Stir in tomatoes; simmer 10 minutes.
