Creole Fried Duckling

1 cup all-purpose flour
2 teaspoons paprika
2 teaspoons salt
1/4 teaspoon pepper
1 (4- to 4 1/2-pound) dressed duckling, cut up
1/4 cup butter or margarine
Melted shortening
1/4 cup water


Combine flour, salt, paprika, and pepper; mix well, Dredge duckling in flour mixture.

Melt butter in a large skillet over low heat; add melted shortening to equal a 1/4-inch depth in skillet. Heat butter and shortening to 350°; add duckling, and fry until golden brown, turning frequently.

Reduce heat to low; add water. Cover and cook for 30 minutes or until duckling is tender.
