Creamy Polenta Recipe

This quick and easy polenta recipe requires just 5 ingredients. 

Serves 4 (serving size: about 1 cup)

2 1/2 cups 2% reduced-fat milk
2 cups unsalted chicken stock (such as Swanson)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup stone-ground polenta


1. Bring milk, chicken stock, salt, and pepper to a simmer in a medium saucepan over medium-high heat. Gradually add polenta, stirring constantly with a whisk. Reduce heat, and simmer 10 minutes or until liquid is absorbed, stirring occasionally.
