Cranberry-Orange Relish

5 cups fresh cranberries
2 cups sugar
1 cup orange juice
1/2 cup finely chopped orange rind
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom


Combine cranberries, sugar, orange juice, rind, nutmeg, and cardamom in a heavy saucepan; stir well. Bring to a boil. Reduce heat, and simmer 10 minutes or until cranberry skins pop, stirring occasionally. Remove from heat; cool. Transfer to a serving bowl, and chill thoroughly.
