Crackling Cornbread Muffins

2 cups cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
2 teaspoons salt
1 egg, beaten
2 cups milk
1 cup cracklings


Combine cornmeal, flour, baking powder, and salt; stir in egg and milk. Add cracklings to batter, stirring well.

Heat two well-greased muffin pans in a 400° oven for 3 minutes or until very hot. Pour batter into hot muffin pans, filling two-thirds full. Bake at 350° for 30 minutes or until golden brown.
