Collard Green Slaw with Anchovies
Makes 8 cups

1 shallot, minced
2 tablespoons sugar
1 teaspoon lemon zest
1/4 teaspoon crushed red pepper
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup rice vinegar or cider vinegar
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
2 tablespoons fish sauce
1 1/2 pounds collard greens, tough stems removed and cut into julienne strips
8 white anchovies or anchovies
1/2 cup shaved Parmesan cheese


Prep: 20 Minutes

1. Combine first 10 ingredients in a small bowl, whisking until sugar dissolves. Pour over collard greens, tossing until coated.

2. Toss collard greens with anchovies and Parmesan; let stand 30 minutes.
