1 tablespoon olive oil
1/4 cup finely chopped onion
1 teaspoon grated fresh ginger
1 garlic clove, minced
1 1/4 cups jasmine rice or basmati rice
1 (15-ounce) can light coconut milk
3/4 cup chicken broth
1 (3-inch) cinnamon stick
1/2 teaspoon salt
1 tablespoon fresh lime juice
2 green onions, sliced diagonally


Heat oil in a medium saucepan over medium heat. Add onion; cook 3 minutes, stirring frequently. Add ginger and garlic; cook 30 seconds, stirring constantly. Add rice; cook 1 minute, stirring constantly. Stir in coconut milk, broth, cinnamon stick, and salt; bring to a boil. Cover and simmer 18 minutes or until liquid is absorbed and rice is tender. Remove from heat; let stand 5 minutes. Drizzle with lime juice, and fluff with a fork. Sprinkle with green onions.
